Classic Cinnamon Coffee Cake

2 cups all-purpose flour 1 cup sugar 1 cup sour cream ½ cup butter 2 eggs 1 tsp baking powder ½ tsp salt 1 tsp vanilla Streusel: ½ cup brown sugar, 1 tsp cinnamon, ¼ cup flour, ¼ cup cold butter

Instructions

Preheat oven to 350°F. Grease a 9x13 inch baking pan. Prepare ingredients ahead of time to ensure a smooth baking experience.

In a large bowl, cream butter and sugar. Add eggs, vanilla, and sour cream. Gradually mix in flour, baking powder, and salt until smooth.

Combine brown sugar, cinnamon, and flour. Cut in cold butter until crumbly. This mixture gives the cake its signature cinnamon swirl and topping.

Spread half the batter in the pan, add half the streusel, then repeat. Bake for 35–40 minutes or until a toothpick comes out clean from the center.

Let cake cool slightly before slicing. Dust with powdered sugar if desired. Serve warm or at room temperature with coffee or tea.
